Turkey Leftovers – It’s A Beautiful Thing

When the Thanksgiving holiday is over… what do you do with all that left over turkey? 
This is a family recipe that I’ve been making for as long as I can remember. It’s a delicious lunch meal the next day.

What you will need for this recipe:

1 cup cooked turkey cut into chunks or shredded

2-3 tablespoons of good mayo

1 stalk of celery (chopped)

å_ small red onion (chopped) about 2 tablespoons

å_  small carrot (shredded)

Salt and  pepper to taste
 
Toasted whole wheat bread or Portuguese role

This makes enough for 2 fabulous sandwiches, one for you and one for a friend or neighbor.

Directions:
Mix all ingredients in a large bowl. If you prefer to forgo the bread, put over mixed greens for a healthy alternative. Serve chilled.

For a tasty and colorful version, spread cranberry sauce on the bread. It’s yummy.
