Recipe: Patti’s Corn, Avocado & Tomato Salad

After years of asking and begging Patti for her salad recipe she finally broke down and gave it to me. Thank you Patty for your fabulous recipe and sharing it with us.

In a large bowl place the following ingredients:

3 Ears of corn, cooked, cooled and cut off the husk

1 diced (1/2 inch pieces) avocado

1 pint grape or cherry tomatoes halved

1/2 cup finely diced red onion

A handful of chopped cilantro

Now, in a separate small bowl whisk together the following:

1 tablespoon of fresh lime juice

2 tablespoon of extra virgin olive oil

1 teaspoon of salt

1/4 teaspoon of fresh ground pepper

Stir the vinaigrette into the salad mix (gently) taste for seasoning and serve.
