A Baguette Lunch Worthy of Travel
Pear, Brie and Pecan Honey-Mustard Baguettes
In keeping with our Summer Picnic theme here is a tasty treat that will inspire you to go on a picnic even if you’re only venturing out to your own back yard. One warning: once you taste it you’ll be hungry for more. Invite some friends or you’ll find yourself finishing it throughout the day. (Can you keep a secret? That’s what happened to me.) Yum yum.
Serves 4
What you need:
¼ cup pecan pieces
2 tablespoons Dijon mustard
1 tablespoon honey
¾ teaspoon cider vinegar
1 long, thin baguette
1 pound brie cheese
1 pear, thinly sliced
1 bunch of watercress
In a food processor, pulse pecan pieces until ground (or desired texture is reached). Add in the mustard, honey and vinegar until combined.
Slice the brie into 8 equal strips (approx ¼- ½ inch slices). Cut the baguette into 4 pieces and slice each down the middle. Spread ¼ of the honey mustard mixture on the bread and then top with 2 slices of brie. Add the pear slices and watercress.
Wrap in parchment paper and you’re good to go.
