Easy Chicken & Pineapple Salad
I love cooking using fresh ingredients but I'm never shy about maximizing
the potential of items from my well-stocked pantry. This is an easy recipe
that cuts corners, but does not sacrifice taste or style. That means it's
great for last-minute guests--or even last-minute "let's have a picnic!"
plans. Perfect with ham or turkey too.
What you will need:
- 1 (20-ounce) can Dole pineapple chunks in juice
- 2 (5-ounce) cans Hormel Premium Breast of Chicken
- 1 small red or green bell pepper, cut into 1-inch chunks
- 1 cup sliced celery
- 1/4 cup sliced green onions
- 1/2 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt, if desired
- Lettuce leaves
Drain pineapple; reserve 1 tablespoon juice.
Combine pineapple, chicken, bell pepper, celery and green onions in large bowl; set aside.
Stir together mayonnaise, garlic powder, reserved juice and salt, if desired.
Pour over chicken salad; toss to evenly coat.
Cover and chill at least 30 minutes to blend flavors.
Serve on a bed of lettuce or any other fabulous greens.
For the best visual impact, use the good china with a great looking
linen napkin. Now that's casual luxury! You're ready to invite a friend and enjoy.
