
Irish Mushroom Salad
My dear friend Jenny joined me in the kitchen to share her family's mushroom salad
recipe that has been a tradition in her family for almost 30 years. Here is a wonderful
way to bring a little "luck of the Irish" into your home. But not to worry,
you won't need any for this recipe—it's that simple!
What you will need:
15 to 20 large white mushrooms; clean with a damp paper towel, trim and slice thinly. Note: Never clean mushrooms by immersing them in or under running water as the mushrooms
will absorb water and get mushy.
1/3 cup fresh herbs cut finely: chives basil, lemon balm; marjoram and/or parsley
1 medium clove of garlic chopped finely
Salt & fresh cracked pepper to taste (I prefer kosher or sea salt)
½ cup of mayonnaise (low fat optional)
Put all ingredients together in a large bowl and toss gently. This savory dish is
delicious on its own or with chicken, hamburgers or even as a filling for a baked potato.
